With heavy hearts, we share the passing of Michael Brendan Pancoast, affectionately known as “Chef,” on January 30, 2026. Born on May 24, 1948, Mike was a beloved husband, devoted father, proud grandfather, and a true friend to anyone lucky enough to cross his path. His warmth, humor, and generous spirit filled every room he entered, leaving an imprint on countless hearts.
Raised in Yonkers, New York, Mike graduated from St. Helena High School in the Bronx and went on to proudly earn his Certified Executive Chef (CEC) title from the Culinary Institute of America in 1972—a graduation ring he never took off and wore with unmistakable pride, often paired with his favorite CIA hat and sweatshirt. He became a talented chef and the beloved owner of Roberto’s Restaurant in Tuckahoe, NY, where his passion for food and people came together night after night. After retiring from restaurant life, Mike spent ten years working as security at Bon Secours Good Samaritan Hospital, continuing his lifelong habit of showing up for others in meaningful ways.
Mike was a proud U.S. Army veteran. In 1969, he married the love of his life, Patricia (Perrotta) Pancoast, in Bronx, NY. Together they shared 57 years of marriage, starting their family in 1978 and raising their sons in New City, NY, for 38 years before moving to Florida in 2022.
At the heart of Mike’s life was his family. He was a devoted husband, a proud father to Michael (Lauran) and Christopher (Tara), and a cherished “Papa” to Lea, Brayden, Matthew, Simone, Ruby, and Layla. His heart swelled with pride whenever he spoke of his grandchildren, and he never missed a chance to brag about their accomplishments in school, sports, and their various activities.
Mike was predeceased by his parents, Margaret and Harry Pancoast. He is survived by his siblings, Mary Campbell, Clare (Bob) Hassick, and Denis (Mary) Pancoast; his brother-in-law, Ken Coniglio, predeceased by his wife, Ginny Coniglio; Joseph and Patricia Perrotta; Madeline Perrotta, predeceased by her husband, Michael Perrotta; and many nieces, nephews, great-nieces, and great-nephews who shared in his warmth, humor, and legendary stories.
With a gruff exterior but the softest heart, Mike opened both his business and his home to people from all walks of life—offering opportunities, comfort, and sometimes a place to stay for a little while longer than planned. He treated everyone the same—whether it was a Yankees player dining at Roberto’s, the teller at the bank, the cold-cut slicer at ShopRite, the cashier at Rockland Bakery, or the head surgeon at Good Samaritan Hospital—with his straightforward personality, humor, and respect.
A natural storyteller, Mike could fill a room with wild tales and the inevitable laughter that followed. He loved hosting - holidays, graduations, both of his sons’ engagement parties, and countless birthday celebrations, including those for his grandchildren by the pool. One of his greatest joys was his pool, where he unwound after long days in the kitchen with an evening swim in the buff. His favorite way to relax was at the beach—spending many cherished family vacations at the Jersey Shore—often found slathered in tanning oil, enjoying an ice-cold Diet Coke and a turkey sandwich, followed by a good long nap - completely content. We cannot imagine a time when Mike’s stories won’t fill a room or his laughter won’t echo. He lived a life defined by joy, generosity, connection, and care for others. His legacy lives on in the family and friends who were lucky enough to be part of his world.
