Elizabeth, or Beth as her family called her, was born a proud Cajun in Lafayette Louisiana. Beth was unique to say the least, an independent thinker extremely well read and stubbornly opinionated, always prepared to debate or argue if necessary her points of view. She was tough, surviving many of life’s challenges to include beating breast cancer. She was deeply religious, raised as a Catholic married to a Baptist, later becoming Non-Denominational only to travel to Israel and live on a Kibbutz while digging for the ashes of the Red Heifer with Vendyl Jones. The experience of living in the holy land compelled Beth and her husband James to convert to Judaism. Fluent in English and Hebrew, she was devout in her beliefs and unwavering in her faith. She enjoyed scuba diving the world with her husband and son. In addition to adventure, she was a culinary genius in the kitchen and took great pride in passing on her skills to her granddaughters. She was a daughter, a sister, a wife, and a mother, and in her own unique way she touched the lives of all of those who were lucky enough to meet her. She was ornery until the end, yet somehow, odds are, that will be what is missed about her the most…………….. I love you mom…………………
