Kathleen (Simon) Eckstein went peacefully to be with the Lord on Saturday, May 26, 2018. She was born in Duncan, Oklahoma on November 12, 1935 to Addy P. and Diamond Simon. In 1958, Kathy married the love of her life, Jim Eckstein, and raised their precious daughter, Susan: who was the center of their world. Kathy adored Susan and could not have been more proud of her. They shared a special relationship, and loved being together. Kathy has four amazing grandchildren whom she loved more than anything. Her grandchildren loved to be with her any chance they got, each bringing her indescribable joy. They each shared a special bond, and all adored their Sity. Kathy worked at her brother’s restaurant, Junior’s, from the day it opened in 1973 until 2014. She treasured the relationships that were built with coworkers and customers over her 41 years. Known affectionately to her nieces and nephews as “Auntsie”, Kathy was the fun aunt who everyone wanted to spend time with. She opened her heart and home to everyone, whether it be for her famous burger nights or Christmas Eve. Kathy had the gift of writing, and wrote incredible poems to those she loved. She lived her life caring and doing for others, and making sure those she loved were taken care of. Those who met her were blessed by her joy, creativity, and loving nature. Her faith in the Lord was strong, and it carried her throughout life. She leaves an everlasting legacy of love and wholehearted devotion to her beloved family. Kathy is preceded in death by her parents, and by brothers Ned, Fred, Amil, Richard, Junior and sisters Lou and Flo, and precious husband Jim. She is survived by Daughter Susan Backry of Edmond, Oklahoma and grandchildren, Kelsey, Michael, Kenzie, and Alexandra. Sisters, Madeline Rahill, Charlene Rahill, and Brother Kay Simon. The family would like to thank the 3rd floor nursing staff at Mercy Hospital for their outstanding and tender care to both Kathleen and her family, with a special, heartfelt thank you to Jessie. Visitation is scheduled on Wednesday, from 8am- 8pm, family to greet friends from 6pm-8pm May 30th at Hahn-Cook/Street & Draper. Funeral Services will be held at Crossings Community Church Chapel (14600 N. Portland), Thursday, May 31, 2018 at 1 pm. Interment to follow at Rose Hill Burial Park.
