Ervin proudly served in the United States Air Force during the Vietnam War Era. As an avid outdoorsman, he enjoyed all types of hunting and had a great passion for freshwater fishing and saltwater fishing. He was happiest wherever he could find a watering hole. He loved his family very much and some of his fondest memories involved reading stories to all of his Grandkids and taking them places to have fun adventures. Nothing made him happier than playing with his Grandkids. Ervin liked to take short trips, no matter which direction he went, and would stop at any historical markers he could find to read them. There were times he would make a quick U-turn just to see what happened at that spot. He loved history and wanted to immerse himself in it as often as possible. He made a living as a truck driver, hauling drillpipes to rig sites and hauling different types of concrete powder and pellets to all types of places - in town and out of town.
Ervin was preceded in death by his father Ervin Victor Fishbeck, Sr., mother Virginia Faye Blaschke, brother Gerard (Gary) Fishbeck, and sister Yvonne Fishbeck Daut.
He is survived by his loving wife of 34 years, Susan Howe Fishbeck; step-children Eric, Tammi, and Troy Schenck, who he raised as his own; grandkids Chelsey, Wyatt, Cheyenne, Patrick, and Jeremiah Schenck; great-grandkids Enola and NoraMae Schenck; siblings Ronald & Jesse, Patricia & Raymond Dirba, Christopher & Debbie Fishbeck, Sandra & Matt Kresse, Joseph Fishbeck, Cheryl & Robert Burt, Janet & Bill Dirba, and Carol & David Oberrender; brother-in law Fred & Sheryll Howe; sister-in-law Sheryl Ann DeWitt; and a host of nieces and nephews. He was also a longtime friend of Bill Wilson.
