She was one of four children born to Arthur and Ellaretta Beeler. She married Edward Schafer on June 30, 1950 and had two children, Richard Schafer and David Schafer. In 1952, Ruby and Edward built a house in Bellaire. When the house was built, you could look south and see rice fields.
Ruby and her family attended Park Place Assembly of God where she helped in the nursery for many years. She later attended Braeswood Assembly of God until her lack of hearing forced her to stay home. Her faith was an important part of her life. She spent time every day reading her Bible and praying. She was a faithful supporter of missionaries and would have them visit her house whey they were in town. She was an avid gardener. When passing the house, may people would stop and admire the flowerbeds.
She was still working in her flowerbeds and mowing her own lawn into her early 90s and would still get her chain saw out to cut up fallen limbs. In her mid-90s, every day included sweeping the driveway and raking her lawn. Her house had a huge vegetable garden. These fresh vegetables were frozen and canned for use throughout the year. Cooking was always a big part of Ruby’s life.
As a stay at home mom she would get up early every morning to fix Edward a full breakfast before he left to go to work at the TV station and make sure there was a meal ready for supper. Every December she would host a meal for her Sunday school class at her home. It was an event looked forward to by everyone. Ruby loved her grandchildren. She and Edward took them on summer trips every summer. A visit to grandma’s house was a special time for them and no visit was complete until she would make them a milkshake in special Charlie Brown mugs and played Monopoly. She loved visits with her great grandchildren and would always get excited when they came for a visit or she could see new photos.
Unfortunately, when she was 95, physical issues forced her to leave her home of 65 years and move to an assisted living facility. Miss Ruby, as she was known, was loved by the entire staff and was always proud to show off her family when they came for a visit. Ruby passed away in her sleep in the early morning hours on July 22.
She was preceded in death by her father Arthur, her mother Ellaretta, brothers Francis and Gerald, and her husband Edward. She is survived by her brother Glen, her two children Richard and David, her grandchildren Jonathan and Andrew, six great-grandchildren and many cousins, nieces and nephews.
