

Born on March 2, 1933, in Yarrelton, Texas, Elsie was the daughter of Anton Emil Vybiral, Sr. and Rosa (Olis) Vybiral. She grew up in a loving family and was a proud graduate of Cameron High School.
On October 24, 1953, Elsie married the love of her life, Wallace Jez, with whom she shared many devoted years. Wallace preceded her in death.
Elsie lived her faith deeply as a longtime member of St. Mary’s Catholic Church in Temple, where she was active in the Altar Society. Throughout her life, she worked in several roles that showcased her dedication and care for others. She was employed in the bookkeeping office at Scott & White Hospital, served as secretary for Dr. Aycock, Chiropractor, in Temple, and later worked for R.V.O.S. in Temple, Texas.
Elsie’s heart was most at home on the farm. She took great joy in caring for her cattle, doves, peacocks, chickens, and her many beloved cats and dogs. The simple beauty and rhythm of farm life were treasured parts of who she was.
She is survived by her daughter, Magdalen White-Doehre and husband Tom of Temple; her grandchildren, Ethan White and wife Shelby of Troy, Jennifer Jarosek and husband Ryan of Temple, and Lindsey Jez Horsley of Temple; Step grandchildren, Mandy Doehre and Brandon and wife Lisa, all of Troy and her great-grandchildren, Harper, Brayden, Gavin, Maverick, and Kori White, all of Troy, Jace and Jentry Jarosek of Temple, and Liam Horsley of Temple. She is also survived by her sisters, Edna Etheridge of Temple, Evelyn Montgomery of Temple, a daughter-in-law Ellen Jez of Temple and many cousins, nieces, nephews, and friends
Elsie was preceded in death by her husband, Wallace Jez; her son, Adrian Joseph Jez; and her brothers, Joe Vybiral and Anton Vybiral, Jr.
Mass of Christian Burial will be held on Monday, December 8, 2025, at 10:00 a.m. at St. Joseph Catholic Church in Burlington, Texas, followed by burial at St. Joseph Cemetery.
Visitation will take place on Sunday, December 7, 2025, from 2:00 p.m. to 4:00 p.m. at Scanio-Harper Funeral Home in Temple, with a Rosary to follow at 4:00 p.m.
Elsie will be remembered for her strength, kindness, and the love she poured into her family and her farm. Her legacy lives on in the generations she nurtured and the life she lived with grace and devotion.
