

Jai Sook Metcalf was born on December 17, 1934, in Seoul, Korea. She was one of nine children. Jai Sook was commonly known as “Kim” to all her family and friends. She was a very fun loving, kind and generous person. Kim received her education in Seoul, Korea. She started working with her parents in their family store at a very young age which gave her an incredible work ethic.
In the mid 1950’s, while working in the family store, she met her one and only love, Leon Metcalf, a US Army Soldier. While there was a language barrier, the two managed to communicate, fall in love, got married and had two children, Jeffrey and Cynthia Metcalf.
After working many years in the food industry, Leon and Kim purchased a convenience store and named it POP -N- Kim’s. This is where Kim made her legacy. It was in that store where all of Queens, NY began to know and love Pop and Kim. She was known for her delicious beef patties and the COLDEST 40’s in Queens. People still talk of POP -N- Kim’s years after the store was sold. She was a pillar in the community.
Kim loved spending time with her family but most of all she loved her husband, Leon. She loved her tofu, kimchi and rice. Our family gatherings always included her delicious fried rice and the Korean dish Japchae.
Jai Sook Metcalf is preceded in death by her husband Leon Metcalf and son Jeffrey Metcalf. She is survived by her daughter Cynthia Bazemore (Thomas), daughter-in-law Calleth Metcalf. Four grandchildren: Thomas Arrington lV (Yaneke), Trevor Cooper Jr, Kayla Bazemore and Daniel Metcalf. Three great grandchildren: Quinton Cooper, Savannah Arrington, Nas Arrington and a host of relatives and friends. The family apologizes if a loved one has not been mentioned.

A gathering of family and friends for Jai Sook will be held Saturday, April 29, 2023 from 3:00 PM to 5:00 PM at Baldwin Fairchild at Chapel Hill, 2420 Harrell Road, Orlando, FL 32817. The family will meet at O.B. Davis Funeral Home at 8:30 am on Friday, May 5, 2023, 2326 Middle Country Rd, Centereach, NY 11720 to travel for the graveside service at 9:30 am on Friday, May 5, 2023 at Calverton National Cemetery, 210 Princeton Boulevard Calverton, NY 11933.
