

Carolina passed away peacefully on June 6, 2025 at the age of 78, in San Antonio, Texas, with her loving children (Carlos, Edwin) and grandchildren (Isiah, Nathaniel) by her side. She was a compassionate and loving mother, wife, grandmother, and friend. A compassionate and loving mother, wife, grandmother, and friend, she will be deeply missed by all who knew her.
Carolina was born in Cebu (Mandaue), Philippines to her now deceased parents, Gregorio & Matilde Dignos. She also joins several deceased brothers and sisters, and leaves her remaining sisters and brothers there in the Philippines.
One of fifteen children, she graduated from The University of the Visayas Senior High School, Cebu City, Philippines. A few years after graduation she met and married the father of her two children, Kenneth Feaster, who was stationed there with the USAF. Their military travels eventually brought them to San Antonio, Tx, where, after divorce, she later met and married her 2nd husband, Chauncey Jackson.
A devoted and loving wife, Carolina was also a loving mother to Carlos and Edwin and a cherished grandmother to her two grandchildren, Isiah and Nathaniel. She was known for her warmth, kindness, and generosity, as well as her passion for cooking and homemaking; the outdoors; nature; and gardening. She took active delight in playing tennis and golf, and traveling around parts of Texas playing different golf courses. She worked several years with the Military Exchange System (AAFES) as a Retail Associate, both in Japan and the USA. And she loved her part-time job with the AAFES PX at Fort Sam Houston, right up until her tragic illness. Carolina also had a light-hearted nature about her, and thoroughly enjoyed local cultural events, that summed up her personality: laughing, celebrating (Fiesta!), dancing (cumbia!), caring, giving, joking, loving. Carolina is survived by her children, grandchildren, and many other loving family (and extended family) members and friends, including all in the Philippines.
A memorial service celebrating Carolina Jackson’s life will be held at the Northeast Christian Church, 2839 Woodbury Dr, San Antonio, Tx 78217 (off Nacogdoches Rd) on July 12, 2025.
