

COLUMBIA - A funeral service for Demeter Carroll, 73, will be held at 11:00 a.m. Wednesday, January 21, 2026 at Holy Trinity Greek Orthodox Church. The family will receive friends from 10:00 until 11:00 a.m. prior to the service at the church, with Trisagion Prayers beginning at 10:30 a.m.
Mrs. Carroll died Sunday, January 18, 2026. Born in Drakeia, Greece, she was the daughter of the late Georgios Doukas and Vasiliki Efstathiou Doukas. She was a member of Holy Trinity Greek Orthodox Church.
Her proudest moments were becoming a United States Citizen and owning her own business in Columbia, SC. Demeter loved her Greek community and friends, all of whom showed her unwavering love and support. She loved to paint, make hand crafted jewelry, and utilize her exceptional skills as a seamstress.
Demeter was bold, bright, and beautiful. She was often described as the life of the party and would dance the night away in her younger years, before becoming ill. She was known for her brave and independent nature and her undying commitment to her family, friends and country.
Surviving are her son, George Carroll, daughter-in-law Kimberly Carroll, her sister Foteini Simiakaki, and multiple nieces and nephews. Also a daughter, not by blood but by love, Anita Rickman.
In addition to her parents, she was predeceased by her beloved husband, Louis “Steve” Carroll, and her brother Nikolaos Doukas.
The family wishes to thank all the friends and family through the years that have made her live so fulfilling. A warm thank you to Prisma Health Hospice and caretakers who have cared for her in her most needed times over the last several months for their care and guidance. A special thank you to Mariame Camara who cared very well for her and her family during her final months of life.
