

Born on May 28, 1923, in Catawba County, she was the daughter of the late Jasper Hall Stafford and Vergie Starnes Stafford Townsend.
Elizabeth was a member of St. Peter’s Lutheran Church in Conover where she devoted herself to the Lord and vowed to lead by example. She loved to bake pies and cakes and was well known for her chicken pies.
In addition to her parents, she was preceded in death by her first husband, Everette Eckard; second husband, Carroll Huffman; brother, Louis Stafford; and son-in-law, Eddie Baker.
Those left to cherish her memory are her son, Jerry M. Eckard and wife, Sandy of Conover; daughters, Judy E. Baker of Hickory, Vickie E. Miller and husband, Steve of Hickory; three step-sons; two step-daughters; brothers, Hall Stafford, Jr. and wife, Darlene of Taylorsville, Hugh Stafford and wife, Faye of Taylorsville, Fred Stafford and wife, Colleen of Hickory, Glade Stafford and wife, Lula of Taylorsville; sister, Ruby Bryant of Taylorsville; grandchildren, Susan Shelor and husband, John, Heidi Hedrick and husband, David, Todd Eckard, Tiffany Miller, Cory Miller and wife, Kristi; great-grandchildren, Drew Ballard, Logan Hedrick, Taylor Hedrick, Seth Eckard, Claudia Eckard, Alec Miller, Raven and Raider Miller, Jackson Pressley, and Larken Pressley; and special friend, Maxine Brown Killian.
A Service of Remembrance will be held on Wednesday, June 29, 2016 at 3:00 p.m. at St. Peter’s Lutheran Church in Conover. The Rev. Kevin Graudin will officiate. Burial will follow in the church cemetery.
The family will receive friends prior to the service from 1:30 to 2:45 p.m. at the church.
