

Valerie was born May 4, 1932, to Kenneth D. and Louise H. Bowman in Warsaw, Indiana. She was christened Valerie Ann Bowman at the Warsaw Presbyterian Church. Valerie moved South to Jackson, Mississippi in 1943, with her parents and two younger brothers, Richard and Alan, where their dad went to work as an airplane mechanic for the U.S. Army Air Corps. A year later, the family moved to Mobile, Alabama. After graduating from Murphy High School, Valerie attended the University of Alabama, where she earned a B.S. degree in home economics. She accepted a job at the V.A. hospital in Houston. In 1953 she married Floyd E. Knotts Jr. of Palestine, Texas, a banker. She attended graduate school at The University of Houston where she earned M.S. and Ph.D. degrees in nutrition. She worked at The University of Texas Health Science Center and later at the University of Central Oklahoma where she became a full professor. Valerie was President of the Texas Dietetic Association in 1980. She retired and moved to East Tennessee and then to Spring, Texas. Valerie was a skilled seamstress and participated in the Woodlands Methodist Church craft circle. She is survived by her brother, Alan and his wife Carolyn, by nieces Valerie F. Bowman, Mary Lou Florian, and Danielle Bowman, by nephews David R. Bowman and Kenneth M. Bowman, grandnieces Melinda G. Florian, Victoria Cribley, and Makenna Douds, and grandnephews Reese A. Bowman, Daniel A. Florian, and Luke E. Bowman. Valerie left this earth to join her Lord in Heaven on October 22, 2022.
A memorial service will be held at The Woodlands Methodist Church on November 15 at 2:00pm. In lieu of flowers, donations can be made to The Woodlands Methodist Church Craft Circle which supports missions at twmc.org/give.
