

She was born to Ignacio and Hortencia Elizondo on April 3, 1961 in Weslaco, Texas. Carol, as she was affectionately known to her family and friends, graduated from Weslaco High School in 1979 and attended Pan American University.
Carol married Satpal S. Sidhu in 1984. They lived together in Plano, Texas, relocated to Parker, Texas and then returned to Plano, Texas in 2011.
Until recently, Carol, together with her husband, owned and operated a popular Mexican food restaurant in Plano, Papaya’s. In addition to being a businesswoman, Carol was also an advocate for women’s heart health. She promoted heart health among those in her community, and she encouraged participation in the American Heart Association’s Go Red for Women campaign.
Carol was a faithful member of St. Mark the Evangelist Catholic Church in Plano, Texas. She loved spending time with her family, sitting outside and admiring her roses, and taking care of those she loved.
Carol is survived by her husband, Satpal S. Sidhu, and their three daughters, Stacey K. Sidhu, Christine K. Sidhu, and Sarah K. Sidhu, of Plano, Texas. She is also survived by her parents, Ignacio and Hortencia Elizondo (Edinburg, Texas), her brother, Ignacio Elizondo, Jr. (Irving, Texas), and her sisters, Mary E. Elizondo (Allen, Texas), Becky Elizondo (McKinney, Texas), Lydia Elizondo Mount (McAllen, Texas), and Erica Elizondo (Edinburg, Texas).
A viewing will be held at Ted Dickey West Funeral Home in Dallas, Texas from 5:00 pm to 7:00 pm on Friday, February 10, with a Rosary immediately following from 7:00 pm to 9:00 pm. The funeral Mass will be held on Saturday, February 11, at St. Mark the Evangelist Catholic Church in Plano, Texas at 1:00 pm.
