Born to Hing Fook (Jim) Hum and Suey Soong Yee in Kwang Tung, China, on April 18, 1936, Wilson was a cherished son, husband, father, grandfather, great-grandfather, friend, and mentor, whose presence illuminated the lives of all who knew him. Wilson immigrated to Canada as a young teenager with his parents, seeking new opportunities and a brighter future. Together, they embraced the challenges of building a life in a new country, a journey that laid the foundation for Wilson's remarkable achievements and unwavering commitment to his family and community.
Wilson's father, Hing Fook (Jim) Hum, was one of the original thirteen founding families in Halifax and established the Hum Kwong Yee Society, fostering a legacy of unity and support within the Chinese community. Inspired by his father's values, Wilson carried on this tradition by becoming an active and esteemed member of the Chinese community. His involvement and leadership further strengthened the bonds of culture, family, and fellowship.
Wilson was predeceased by his beloved wife, Lai Yok Yan, in October 2016. Their enduring love and partnership were a source of inspiration to all who knew them. Together, they raised six devoted children: Stephen Hum (Wei Hong), Carolyn Hum (Stephen Cholakis), Marolyn Hum, Steward Hum (Diane Sutherland), Nancy Hum (Joel Balbosa), and Cathy Hum (Oliver Nguan). Wilson was a proud grandfather to Laura Hum, Christopher Hum, Aron Hufner, Stephanie Hum, Sonya Hum, Sebastian Hum, Chelsea Balbosa, Amy Balbosa, Zoe Balbosa, Oscar Nguan, and Charlie Nguan, each of whom carries forward his legacy of love and dedication. He was also fortunate to meet his first great-grandchild, Valorie, daughter of Chelsea Balbosa and Jair Soulodre at the family's most recent Christmas reunion, a moment filled with joy and cherished Wilson was a renowned master chef specializing in Chinese cuisine, whose culinary expertise and entrepreneurial spirit left an indelible mark on the dining scene.
His journey began in 1956 with the Tea Garden Restaurant in the old Chinatown, where he introduced his community to authentic flavors and exceptional dishes. In 1970, he expanded his legacy with the Princess Restaurant, and in 1986, he opened the Empress Restaurant, solidifying his reputation as a leader in the industry. Through his dedication, creativity, and passion for culinary excellence, Wilson created not just meals but lasting memories for all who dined at his establishments. Wilson will be profoundly missed by his children, grandchildren, great-grandchild, extended family, and close friends. His memory will endure in the hearts of all who had the privilege of knowing him.
A visitation will be held at JA Snow Funeral Home, 339 Lacewood Drive, Halifax, NS, on Friday, May 2, 2025, beginning at 6:00 PM. A funeral service will take place on Saturday, May 3, 2025, at 10:00 AM.
