SueJean Deminico, “Susie Eagle” passed away peacefully on June 13, 2021, due to complication from emergency surgery. She was preceded in death by her Daddy William H. Eagle, Sr. and Mama Flora B. Eagle. She is survived by her son Sam DeMinico (Sara), daughter Chrissy DeMinico, (Andrew Gutierrez) two grandchildren Francesca and Louis Gutierrez, her brother William H. Eagle, Jr, her best friend Lee McKnight, Mike DeMinico, nieces, nephews, extended relatives, friends and her fun-loving Hens.
Susie was born in Richmond Virginia. Her family lived in Atlanta and eventually moved to Tampa in late 50s. They settled at the end of the Spanish Main finger on the open bay. Living on the water, she enjoyed skiing, swimming and running around Tampa Bay in her Boston Whaler. Her parents were real estate investors and had bought, among other properties, The Captain Motel on Clearwater Beach. She had so many good times there with her Mama and guests.
She graduated from H.B. Plant and pursued a modeling career in New York City. She traveled with a friend to Paris where she became enthralled with French food. Upon her return, she was hired as a flight attendant with National Airlines where she was based in Miami. She flew mostly southeast flights occasionally traveling to California. Later, she volunteered with The Lighthouse for the Blind. She enjoyed giving back to the community and it gave her an extremely rewarding experience.
Moving on, she wanted to settle down and raise a family. She had two beautiful children that became the loves of her life. She loved being Mommy. In her spare time, she was an ardent reader and took up cooking. She loved cooking meals for her family and friends. Her favorite foods were French and Italian. She always talked about opening an Italian restaurant called Susie’s Italian Kitchen. Her kitchen was her domain. She would prepare recipes from the Joy of Cooking and Eat This Not That books. Some of her favorite chiefs were Julia Child, Jacques Pepin, and Lidia Bastianich. Her kitchen was equipped with the finest pans, cutlery, and cooking utensils. She used only the best spices and ingredients with the foods she cooked. She would also set a beautiful table for her family and guests using her mother’s china, crystal and silver. She was an impeccable dresser. She wore quality clothes appointed with just the right jewelry and accessories. Her hair and makeup were always perfect. When she went out, she made a statement of style.
She would get together with her friends which were also known as The Hens. They met at each other’s homes to enjoy food, beverages, and each other’s company. They would also take short trips together to relax from the everyday stress of life. They had a great time together.
Having grown up on the water, she loved being close to it especially when she was traveling or dining. She would take trips to New York City to visit Sam. She would shop and wander around the parks near the hotel while waiting on Sam to get off work. They would try all types of New York restaurants such as Babbo Ristorante, Etaly, Club 21 and Sparks Steakhouse. She always visited restaurants by her favorite chiefs that she read about or watched on cable. She was a true “foodie” and as her favorite chief, Julia Child would say, ” Bon Appetit.”
She loved Sam and Chrissy so much and unconditionally. They were her main purpose in life. She talked about them so much. They were her pride and joy. She wanted so much for them to have a good life. She was so excited that Chrissy had two children and always looked forward to their visits. She also was ecstatic that Sam had met Sara and that they were recently married.
She was a wonderful, loyal, and loving person and will be missed by all her family and friends.
