

Edith Marie Christoffersen went to her eternal rest on April 26, 2016 in Live Oak, Texas at the age of 99, surrounded by her family. Edith, affectionately known as “Mom” or “Olde-mor” to her loved ones, was born on December 24, 1916 to Johan and Margarethe Jorgenson. Mom was the oldest of six children growing up in Copenhagen, Denmark. Her father died when she was fourteen and she was pulled out of school to work with her mother in a flower shop to help support the family. At sixteen with only a Danish/American dictionary Edith came to the U.S. eventually becoming a U.S. citizen. Mom worked as a "Rosie" the Riveter at Republic Aviation on Long Island on the P47 Thunderbolt aircraft during the war years and received an award for being the fastest Riveter on her line, of which she was very proud. Mom and Dad met on Long Island through mutual Danish friends and the rest is history: 67 years of marriage, four children, seven grandchildren and eight great grandchildren. Edith was preceded in death by her parents, her siblings and a grandson, Stephen Michael Christoffersen. Edith is survived by her husband of 67 years, Knud Christoffersen; her loving dog and companion, Teddy; children, Diane Adamson, Donna Avant (Wayne), Robert Christoffersen (Susan), Ronald Christoffersen (Nancianne); grandchildren, Kelly Adamson (Jerry), Sharon Adamson, Laura Knapp, John Christoffersen, Barbara Smeraldo (Danny), Christine Avant; Travis Avant and Daniel Smeraldo, III; great grandchildren, Derrec Mongan (Caitlin), Seanna Ashley Mongan (Justin), Logan Tassin, Karly Tassin, Christopher Smeraldo, Jordan Westerfield, Kaitlyn Blake, and Cutter Vick. There will be a Memorial Service at Colonial Funeral Home, 625 Kitty Hawk Road, on Thursday, April 28, 2016 at 4:00 p.m. In lieu of flowers, the family asks that donations be made to www.rosietheriveter.org, c/o Marsha Mather-Thrift, Executive Director, 510-507-2276.
