Paul Shun Fui Chong

Paul Shun Fui Chong, age 80, of San Diego, California passed away on Friday, February 17, 2023. Born in Shanghai, China, Paul emigrated to British Hong Kong and spent his early youth sailing the world as a merchant marine. After sailing to almost every seaport in the world, he decided coming ashore permanently would be best for himself, his young bride and three young daughters. He relentlessly pursued and was offered a position as a cook for a Chinese restaurant in America, and emigrated to Hawaii in his late 20’s. The next few years, with little education, speaking broken English, Paul worked tirelessly, often times without any time off, taking positions as a cook in various cities, all with the aim of providing better opportunities for his children and achieving his American dream—to own his own business. Within 10 years of arriving in the United States, he accomplished this dream. Together with his brother-in-law Sit Wai, and colleague, Johnson, he launched the Mandarin Garden restaurant in San Diego. And for the next 40 years established himself as a successful small business owner offering authentic Sichuan cuisine to the communities of San Diego and Southern California, until his retirement in 2007.

Among Paul’s many passions, he considered family, friends, food and the Lakers to be at the very top. His generosity knew no bounds and he often loved to host elaborate Chinese dinners for his family and friends, often saying more food, more merriment, be happy in the moment!

He is survived by his beloved wife of nearly 60 years, Su Ching; his three daughters, Wanda, Leda, and Sandy; son-in-law Kevin; grandchildren, Sarah and Audie; siblings, Diana and Tommy; and nine nieces and nephews, Robert, Iris, Fred, Lucy, Jeffrey, Kevin, Heather, Kerry and Ashley. Preceding him in death are his parents—Chong Lung Hoi (father) and Yang Shiu Mei (mother); brothers—Chong Wan Fui and Chong Fuk Fui; and niece Kristina.
