I don’t think I will ever forget the ringing of Lucy’s enthusiastic voice nor her big, beautiful smile as she’d enter the front door to help Mother. She had a natural beauty & elegance, even dressed for housework, and worked merrily with heart at Mother’s care. One day she asked Mom for leftover disposable dishes, and later delighted Mom by bringing her a homecooked meal. Then there was the time when Lucy & Elydia surprised Mom by secretly piling the table 2’ high with Valentines, stuffed animal basket, flowers, & balloons. The entire table had turned pink & red, it was so well covered. We also had a great time when they took Mom out to dinner sharing wine at a charming rustic restaurant.  And then there was the Thanksgiving we reversed roles and cooked a big turkey with trimmings for Lucy & Elydia because we were so thankful to have them.  But my favorite memory was Mother’s birthday when I decided to make a “healthy” cake.  I had made the frosting with a drink thickener for the elderly and no sugar as Mother had health problems with the standard ingredients.  I figured thickening the frosting with this alternative would be fine as Mom drank it multiple times a day, and it was food grade.  As time went on, the frosting was not thickening well and kept sliding off the angel food, so I kept adding more thickener, and more thickener. It was taking on an unusual translucent shiny appearance, but finally started to hold. I served it quickly, and we were all just fine, but Lucy suddenly got very quiet, looked pale and rapidly excused herself from the table.  Poor Lucy, she tried to be so mannerly about the problem, right in the middle of the little birthday party, but things got so bad she quickly ran home.  Luckily the next day she was fine. But I really learned my lesson about ad libbing with strange ingredients. And although not funny at the time, in retrospect, the memory always elicited a good chuckle amongst us.
