

Carolina Salinas Rodriguez, born on June 28, 1950, in Sabinas Hidalgo, Nuevo León, México, passed away peacefully on January 2, 2025. A devoted wife, mother, grandmother, sister, and friend, Carolina lived a life full of energy, warmth, and an unmistakable free spirit that touched everyone she met.
She is preceded in death by her beloved son, Rene Miguel Sanchez, whose memory she carried close to her heart throughout her life.
Carolina is survived by her loving husband, Alfred Rodriguez, her son Albert Sanchez and wife Maria Sanchez, her sister Izamary Stern. She also leaves behind her cherished grandchildren: Rene Anthony Sanchez, Miguel Angel Sanchez, Albert Ivan Sanchez, Vanessa Carolina Sanchez and Pilar Plascencia, all of whom brought immense joy and pride to her life.
Carolina was the proud owners of Pepe’s Mexican Restaurant on 75th and Griggs, a community staple where countless memories were made and friendships formed. Through her work there and her presence in the community, Carolina touched many lives with her generosity, hard work, and vibrant personality.
She will forever be remembered for her boundless energy, her genuine love for others, and the incredible influence she had on so many. Her legacy lives on in the hearts of her family, friends, and all who had the privilege of knowing her.
Carolina’s spirit, strength, and love will be deeply missed, yet forever cherished.
