

George Apostolopoulos, 81, a longtime resident of Lake Parsippany, NJ, passed away on July 1, 2026. Born in Argos, Greece, to the late Eleni and Sotiri Apostolopoulos, George was a devoted husband, father, grandfather, and beloved figure in his community.
For over five decades, George’s life’s work was the Livingston Diner (previously known as Tod’s Restaurant), which he proudly owned and operated since 1972. The diner was his passion; he found immense joy in fine-tuning his recipes and baking goods for the guests he considered family. When he managed to step away from the kitchen, George could often be found enjoying a round of golf or cherishing time at his home in Greece whenever he was able to visit.
He is survived by his loving wife, Zafira, and his three sons and their families: his son Sotiri and his wife Roula, and their daughter Ava; his son Tasso and his children George and Zoey; and his son Kosta and his wife Bettina, and their children Alicia and twins George and Alex. He also leaves behind his brothers Vasili and Kosta in New Jersey, and his sister Vasso and brother Niko in Argos, Greece.
Funeral arrangements are entrusted to Quinn-Hopping Funeral Home in Livingston, NJ. Visitation (Wake) will be held on Thursday, July 9, 2026, from 4:00 PM to 8:00 PM at the funeral home. The Funeral Service will take place on Friday, July 10, 2026, from 10:00 AM to 11:00 AM at Ss. Nicholas, Constantine & Helen Greek Orthodox Church, 80 Laurel Ave, Roseland, NJ 07068; family and friends are asked to meet directly at the church. Interment will follow at Gate of Heaven Cemetery, 225 Ridgedale Avenue, East Hanover, NJ 07936.
