

Nikki Jimas Cozakos was born November 29, 1940 in Salt Lake City, UT to Joseph E. Jones and Athena Jimas Jones. The first Grandchild to her beloved Yiayia, Nike Jimas, she grew up amongst her cousins in the small town of Bingham, UT. She always told the story of excelling in Greek school and playing sports when girls were not supposed to. Nikki met David Cozakos, fell in love, and married in September 1963. They moved to Encinitas, CA in 1973 where she lived until her passing. Nikki was a beautiful sole, an amazing Mother, and an incredible Yiayia. She was one of the first members of the Saints Constantine and Helen church, the founder of its bookstore, and a vital part of the community. She loved being a Yiayia and spent many hours supporting her Grandchildren at their activities. She also was an avid fan of the Padres and college basketball, often glued to the tv cheering on the home team. She will be dearly missed.
Nikki is survived by her 3 children Andrea Brooks (Shawn Brooks), Athena Harrington (John Harrington), and Jason Cozakos (Christa Cozakos) and her 10 grandchildren Breanna Walthers, Dalena Vintus (Travias Vintus), Joseph Harrington, Angela Harrington, Jaiden Cozakos, Gabriel Brooks, Makalya Brooks, RyenHope Cozakos, Christina Harrington, and NoaGrace Cozakos and 1 great grandson Bjorn Nikolas Boyington. Nikki is preceded in death by her loving husband, David H. Cozakos.
A Trisagion will be held on Thursday, November 6, 2025, at 6:00 PM. Her Funeral will take place on Friday, November 7, 2025, at 11:00 AM. Both services will be held at Saints Constantine and Helen Greek Orthodox Church, located at 3459 Manchester Avenue, Cardiff-by-the-Sea, CA. After the funeral we will proceed to the San Marcos Cemetery for Interment at 1:00 PM, located at 1021 Mulberry Drive #A San Marcos, CA 92069. Following Internment, the Makaria (memorial meal) at the home of Athena and John Harrington will take place at 6833 Via Cuesta Mansa, Rancho Santa Fe, CA 92067 (come in through Gate 6 off of San Dieguito Rd).
