

Delberta “Ruby” M. Carr, age 81 of Lisbon, passed away peacefully on May 12, 2026, surrounded by her loving family, following complications from a recent automobile accident. A devoted wife, loving mother and grandmother, wonderful cook, and cherished friend to many, Ruby touched countless lives with her warmth, kindness, and generous spirit.
Visitation will be held on Tuesday, May 19, 2026 from 2:00 p.m. to 4:00 p.m., with the funeral service to follow at 4:00 p.m. at Fox & Murray Funeral Home with Pastor Ray Selden officiating. Burial will be at Hillcrest Cemetery at a later date.
Surviving are her three daughters, Vicky Carr of Heuvelton, Tammy (David) Abbrid of Ogdensburg, and Tina (John) Cobb of Heuvelton; her grandchildren, Benjamin Abbrid and Aaron (Monica) Cobb; her great-grandchildren Lincoln Abbrid, Addie & Wyatt Cobb and Jace Pike along with several nieces, nephews & cousins.
She was predeceased by her beloved husband, Burton Carr, in 2011; a brother, Paul Moore, in infancy; and a sister, Juanita Powell.
Ruby was born on April 7, 1945, in Heuvelton, the daughter of the late Wade and Ruby (Stevenson) Moore. She graduated from Heuvelton Central School and married the love of her life, Burton Carr, on July 6, 1962.
Together, Ruby and Burton proudly co-owned and operated the Carr family farm for 38 years. In 1998, she fulfilled another dream by purchasing Ruby’s Roadside Grill, where her delicious home-cooked meals, welcoming smile, and friendly conversation made the restaurant a favorite gathering place for the community. Even after retiring in 2014, Ruby’s love for people and hard work brought her back to the restaurant alongside the new owners. Most recently, she worked at Tru North Pizza until the time of her accident.
Ruby found joy in life’s simple pleasures — traveling, cooking, baking, listening to music, dancing, gardening, and spending time with family and friends. She will be remembered as a hardworking woman with a caring heart, a strong devotion to her family, and a gift for making everyone feel welcome at her table.
