

Billy Chill Youn Choi of Roeland Park, KS passed away on March 8, 2011 surrounded by family. Funeral services will be 10 AM, Monday, March 14, 2011, at McGilley & Hoge Chapel, 8024 Santa Fe Drive, Overland Park, KS. Burial will follow at Highland Park Cemetery, Kansas City, KS. Visitation will be 5-7 PM, Sunday, March 13, at McGilley & Hoge Chapel.
Born on December 25, 1944 in Canton, China to parents Toy Gong Ging and Louie Gam Lou, Billy immigrated to the United States in the 1960’s. He worked as a chef for over 25 years at family owned restaurant House of Toy before semi-retiring in 1992. He came out of retirement in 1995 to work as a chef for Hyvee (formally Schnucks). After his permanent retirement in 2007, Billy spent his days teaching Chinese rhymes and games to grand-daughter Layla. He thoroughly enjoyed his role as a fulltime grandfather and was also an avid Jayhawk fan. He never missed a Jayhawk basketball game in over 20 years. In addition to going to the local area casinos with his wife Nancy, he also spent time traveling and visited places like Vancouver, Alaska, Niagra Falls and the Rocky Mountains.
Billy was preceded in death by his mother Louie Gam Lou, uncle Harry Toy and grandson Lukas Ryan Fitzsimmons.
He is survived by his wife of over 40 years, Nancy Chun Chu Choi; father Toy Gong Ging; uncle Daniel Yee, cousin Vivian Louie; brother Sammy Choi, sister-in-law Agnes; brother Wing Choi; son Tony Choi, daughter-in-law Katie; daughters Judy Choi, Betty Choi-Fitzsimmons, son-in-law Tony Fitzsimmons; nephews Simon and Sherman; grandchildren Layla, Liza, Rylan, Rianna and Andrew.
Our family would like to thank Dr. Male and Dr. Crossar, the KU Cancer Center, the nursing staff and caregivers at KU Medical Center for their exceptional care. We would also like to give special thanks to St. Lukes Hospice Team for their excellent care, compassion and guidance.
