

It is with heavy hearts that we announce the passing of Carol Ann Elmer Schmidt, a beloved mother, grandmother, sister, and friend, who departed this world on July 22, 2025, in Metairie, Louisiana. Born on March 14, 1942, in San Antonio, Texas, Carol was a vibrant force of creativity and kindness, touching the lives of everyone she met.
Carol was the cherished daughter of William Wilson Elmer and Mildred Elizabeth Elmer McCluskey. Throughout her life, she embraced her family wholeheartedly, and her legacy continues through her beloved children: Heather Marie Peters and her husband, Allen Thomas Peters; Holly Elizabeth Schmidt and Kenneth Andrew Doidge; and her son, Aaron Michael Schmidt, and his wife, Amy Elizabeth Schmidt. Carol was a proud grandmother to her six grandchildren, Travis Doidge, Tanner Doidge, Brynn Peters, Cade Peters, Ethan Schmidt, and Ella Schmidt, who filled her life with immeasurable joy and laughter.
Preceded in death by her devoted husband, Herbert “Herbie” Emil Schmidt Jr., her parents, and her dear sister, Susan Amy McCaughey, Carol leaves behind cherished memories that will forever resonate in the hearts of her surviving brother, Frank Ledet Elmer and Marjorie Kay Elmer of Beulah Co; brother-in-law Martin Edward Schmidt and Kathy Jean Schmidt of Plano Tx; sister-in-law Susan Nell Schmidt of Sugar Land Tx, along with numerous nieces and nephews who adored her.
Spanning three decades, Carol was affectionately known as "The Cake Lady". She was a masterful confectionary artist who created stunning cakes for mayors, celebrities, professional athletes, family, and friends. Her artistic talents extended far beyond cake decorating; she was a true visual artist who reveled in the joy of creation. Carol’s personality was as vibrant as the city she called home—New Orleans. She thrived in the lively atmosphere of this unique city, which matched her spirit perfectly. With an unparalleled knowledge of New Orleans, she delighted in hosting friends and family, proudly showcasing the culture, history, and flavors of her beloved city.
Her hobbies included travel, reading, and researching family history, but her greatest joy came from spending time with her grandchildren and dear friends. Carol had a special gift for conversation and never met a stranger, making each person feel valued and heard. Her creativity and love for life were evident in every interaction, and her warmth and kindness will be deeply missed.
A visitation will take place at Sunset Funeral Home on Monday, July 28, 2025 at 12:30 pm with a funeral service to celebrate Carol’s remarkable life to begin at 1:30 PM. Interment will follow at Sunset Memorial Park. Friends and family are invited to share in honoring her memory. In lieu of flowers, the family requests donations be made in Carol's memory to The Historic New Orleans Collection or the Friends of the Jefferson Public Library.
