Carolyn Jean “Carol” Simmons, age 79, of Shepherdsville, Kentucky returned to her Heavenly Home to be with her Lord on Wednesday, September 2, 2026. She was born on May 18, 1947, in Louisville, Kentucky to the late William Donald Vest and Lillian Esther (Downey) Howard. Carol was a woman of deep faith and taught her children to have empathy and show kindness and compassion to all they met. She also taught them to stay strong and never give up. Carol enjoyed reading and cooking. Her family fondly remembers her homemade lasagna, chicken noodle soup and fried fish as well as many other delicious dishes. Her true passion, however, was her family; spending time and making memories with them, especially her grandchildren, are what Carol held most dear to her heart. Carol’s loving and considerate nature is a huge loss to her family and all those who knew and loved her. In addition to her parents, she was preceded in death by her brother, Arnold Howard.
Those left to honor and forever cherish her memory are her beloved husband of 60 years, Bobby Simmons; sons, Steve Simmons (Lana) and Brian Simmons (Kristie); daughter, Danielle Simmons (Matt); grandchildren, Katie Simmons and Ryan Briner, great-grandchildren, Meredith Jean and Walker Dean, siblings, Donald Vest, Diana Kelly and Shermaine Miller and a host of other family and friends.
Funeral service will be conducted on Thursday, September 10, 2026, at 10:00 am in the chapel of Schoppenhorst, Underwood & Brooks Funeral Home (Preston Hwy. at Brooks Rd.) with interment in Brookland Cemetery. Family and friends may pay their respects on Wednesday, September 9, 2026, from 1:00 pm until 8:00 pm and on Thursday, September 10, 2026, from 9:00 am until the time of service at the funeral home.
