

Hsu-Mei was born to Bingnan & Yulan Chang on November 22, 1953 in the small town of Luodong, Taiwan and was the third of six children. She met her husband, John, while he was stationed at CCK Air Base (Taichung, Taiwan) in 1971. Hsu-Mei moved to the U.S. with her husband in 1973 and later birthed two perfect children, Michael and Kathy. She was a dedicated housewife who raised her children as John worked two jobs. Hsu-Mei instilled many values in her children including the importance of education, the value of a dollar, being grateful for what you have, and having an appreciation for other cultures.
Hsu-Mei was an avid gardener who could grow just about anything she wanted: oranges, grapefruit, lemons, persimmons, pears, guava (yes, even guava!), a variety of peppers, and a plethora of different vegetables. Her children jokingly called her backyard “The Jungle” and are convinced they’ve seen a lion roaming back there in search of food.
She was a social butterfly and loved socializing with her many friends at bingo and Taiwanese Association events. Hsu-Mei was also famous for her fried rice.
While Hsu-Mei was a loving daughter, sister, wife & mother, the role she loved the most was being Ah ma (Grandma) and absolutely spoiling her grandbabies – Declan (9) and Quinn (2).
Hsu-Mei bravely fought a nearly 20-year battle with cancer and endured many chemo and radiation treatments throughout the years. This resulted in an adverse reaction to cold, immense pain, and the inability to sleep. She was truly a medical marvel and is finally getting the pain-free rest that she so greatly deserves.
Hsu-Mei is preceded in death by her husband, John. She is survived by her son, Michael; daughter, Kathy; son-in-law, Van; grandchildren, Declan & Quinn; and her entire family in Taiwan.
A visitation for Hsu-Mei will be held on Saturday, February 1, 2025 from 1:30 PM to 5:00 PM at Colonial Funeral Home, 625 Kitty Hawk Road, Universal City, TX 78148.
Her funeral will take place on Tuesday, February 11, 2025 at 10:00 AM at Fort Sam Houston National Cemetery (Shelter #4).
In lieu of flowers, the family humbly asks that you please donate to her favorite non-profit organization, St. Jude Children's Research Hospital.
