

Esther is survived by her son, John Ainscough (Rosanne) of Centennial, Colorado, her grandson Thomas Ainscough of Wichita Falls, Texas, her grandson Benjamin Ainscough (Alexis) of Pleasant Grove, Utah, her granddaughter Sara Ainscough of Takasaki, Japan, her great grandchildren Estelle Ainscough and Levi Ainscough and her brother, John Harvey Phelps of Sunset, Utah; She is preceded in death by her husband Harold Jackson, her brother David Phelps and her parents Edmond and Mary Phelps.
Esther was born on December 4, 1930 in San Francisco, California to Edmond and Mary Phelps. She married Norman Gene Ainscough in 1952 and they had one child John Ainscough, she later married Henry Parks and after his death married her soulmate Harold Jackson. She worked at Hill Air Force base as a chemist. She later pursued a teaching degree (graduating from Utah State University) and chose to teach elementary school so she could spend more time with her son. She taught for many years. She loved working with children and encouraging them to pursue their goals.
Esther was accomplished at poetry and some of her poems are published in the book Utah Sings. She was passionate about learning and continued her education on her own after graduating from university. She volunteered for a number of organizations including the Association of University Women, the Daughters of Utah Pioneers, archaeology and history societies, arts programs for school children and storytelling festivals. She also served as president of the League of Utah Writers. She was an active and dedicated member of the Church of Jesus Christ of Latter-day Saints. A favorite childhood memory of hers is walking across the Golden Gate Bridge with her family on opening day.
A graveside service is scheduled for 1 pm August 5 at the Kaysville City Cemetery in Kaysville, Utah. A memorial of her life will be held at a later date in Centennial, Colorado. All are welcome to attend and celebrate Esther's life.
The family would like to thank the staff of the Clare Bridge memory care community at Brookdale Greenwood Village as well as Brookdale Hospice for their efforts in caring for her in her final years.
